From the very famous "Pigeon à la Rouennaise" to the just as renowned "Millefeuille with Bourbon Vanilla", - or chocolate, coffee and pistachio - including the "pan-fried John Dory Fillet in a bouillon scented with kaffir lime and lemongrass"... The cuisine of Gilles Tournadre stages the classics of Norman gastronomy, whilst opening up to the world and the new tastes. A perfect balance!
