In a few words...

A slightly less elaborate style of cuisine that found its haven in the Bocuse temple, which, for 50 years, has basked in the light of its three Michelin stars. You have to deserve to savour the cream of gastronomy. The stage is set from the outset and is on a footing with the Chef of the century, a person who truly enjoys the performance.

A genuine initiation awaits you as soon as you arrive. The master of the house, dressed in his finery, watches over things, resting on the railing of a false window, framed by two lamp posts. The taste for show so dear to Paul Bocuse is always present.

Twelve steps then have to be climbed in order to access the ceremonial courtyard, before passing through the room devoted to the establishment's Chefs. Paintings, photos of personalities who have made a mark on their time, the establishment's diplomas for the Best Craftsman of France, the winners of the Bocuse d’Or, the restaurant displays its history on its walls.

The Chef's tributes and icons are all around. There is no doubt that everything in Collonges au Mont d’Or bears the mark of Monsieur Paul. A centre of excellence containing memories, gastronomy, geography, history, that is what the Auberge is all about.

Finally, a glazed door provides access to the world of the kitchen and the hustle and bustle that reigns there. The team at the commands prepares the specialities that have helped to make Bocuse famous.
